Continuing on with my look back at previous creations, this is my Banana Fluffernutter Cupcake. This was my March entry into the Cupcake Hero challenge, the theme being marshmallow.

This is probably the most obvious use of marshmallow, but I tried to mix it up a little bit. I at first wanted to make a peanut butter cake with marshmallow frosting, but nixed that idea because I thought it would be too boring. Then I thought of banana because that’s always been an excellent combination with peanut butter and marshmallow. So I decided on a banana cake.

When it came time to decide on the frosting, I originally wanted to combine the peanut butter and marshmallow. Then I thought it would look way better if I layered the frostings, so I made two separate frostings and used the peanut butter one as a base and the marshmallow one on top. The cupcake was topped off with a banana chip.

I didn’t win the Cupcake Hero challenge, but I was really proud of my entry nonetheless. The banana cake was delicious. Very moist and great banana flavor. The frostings were so yummy as well.
