I made these for a party that is being held tonight (more on that later). These are very simple to put together and look beautiful when presented. I did not measure any of the ingredients for the filling–I just threw it together and then adjusted for taste. I’ll do my best to estimate how much I used. Please keep in mind: strawberries this time of year are sweet, so don’t add to much powdered sugar to the filling. If your strawberries are tart however, you may need more.
Ricotta Mint Filling
2 cups whole milk ricotta cheese (if you want to use skim milk ricotta, go ahead–it just might be a bit runnier)
1/4 cup powdered sugar (don’t use granular, or you’ll feel the grittiness)
A pinch of salt
Chopped fresh mint leaves (adjust this to your taste–I used about 3 Tbsp.)
Combine all ingredients in a bowl. Adjust your ingredients to taste if needed. Cut out the middle of your strawberries (I used a paring knife and just cut out the core). Fill a piping bag with the filling and pipe the filling into the strawberry. Top with fresh mint.
